The secret’s in the sauce.

A few of my favorite things.  For cooking & everyday dishes, I am in love with California Olive Ranch evoo.  Cento tomato paste in a tube is double-concentrated, providing twice the flavor, and there’s never any waste or mess.  I wanted a little punch of spice in the meat sauce, but I was out of Italian herbs, so I substituted Victoria Taylor’s Herbes de Provence.  It has a spicy little fennel kick that is perfect with the pork and tomatoes.  (Not pictured: fresh local handmade ricotta by Uno Allo Volta.)
